Stuffed Tomatoes

6 Servings
  • 3 Large Ripe Tomatoes
  • 1/2 teaspoon salt, approximately
  • 2 large cloves of garlic, chopped fine
  • 1/4 cup of green onions, chopped fine
  • 1 teaspoon of fresh thyme, chopped
  • 1 tablespoon of fresh basil, chopped
  • 1/2 teaspoon pepper
  • 1/2 cup of fresh Parmesan cheese; grated
  • 1 teaspoon of olive oil
  1. Preheat oven to 400 degrees
  2. Cut the tomoatoes in half, seed and press out the juices, but do NOT mash
  3. Sprinkle halves with salt, then turn upside down on a wire colling rack and let them drain for 10 minutes
  4. Combine the rest of the ingredients, Except the oil, to make the stuffing
  5. Fill the tomato halves with stuffing; sprinkle with olive oil
  6. Spray baking dish with pan spray and place filled tomatoes in dish
  7. Bak for about 10 minutes; or until the tops of stuffed tomatoes brown; but tomatoes are not too soft.
